     Happy Monday friends!  Welcome to the quaint town of Reims located in the Champagne region in northeast France.  Seeing as I could drink champagne all day everyday, we decided that it was crucial to make a short visit to at least one champagne house on our road trip to Paris.  I chose to visit my favorite yellow label: Veuve Clicquot Ponsardin.  I have to say this was one of our favorite parts of the trip!  The Polish man is not a champagne lover like myself, but he enjoyed every minute of the tour.  My favorite part of the tour was walking through the crayères.  Originally chalk mines, they were also used as housing during the war; & due to the constant temperature the mines retain year round-they eventually became cellars for champagne.  These crayères connect to each other throughout Reims underneath the various Champagne maisons such as Taittinger, Pommery, Mumm & Veuve.  Did you know that pretty little bottle with the recognizable yellow label you often pass by in your local grocery store has been aging for at least three years?  Pretty crazy!
      The Champagne house of Veuve is definitely amazing.  A few reasons why I say this: they were noted as the first Champagne maison to produce rosé Champagne.  Secondly, they were the only house that had a woman as their forefront.  Last awesome fact of my favorite bubbly beverage is Madame Clicquot is credited with inventing a riddling table in order to remove the sediments from a bottle of Champagne.  What are we left with?  A delightful clear sparkling glass of champs!  Cheers!
